Blueberry Broccoli Salad

Blueberries and broccoli together for a not so typical spring mix salad

Ingredients
  

  • A package of broccoli slaw
  • A package of iceberg mix
  • 3/4 C Blueberries
  • 1/2 - 3/4 C Pineapple chunks
  • 1/2 - 3/4 C Toasted walnuts
  • 4 - 6 oz. Crumbled Goat Cheese
  • Poppy seed dressing

Instructions
 

  • Spread shelled walnut halves on a cookie sheet and place in 350 degree oven for about 8 minutes. Remove, let cool for a minute or two and chop in half or thirds.
  • Mix broccoli slaw and lettuce mix thouroghly together in a salad bowl.
  • Rinse blueberries and add to the bowl.
  • Chop pineapple and add to the bowl. (You can use canned pineapple chunks and cut them in half or thirds or use fresh pineapple)
  • Add goat cheese and walnuts.
  • Combine 1/4 cup of sugar (regular or cane ), 3/4 C olive oil, 2 tbsp. apple cider vinegar, and 2 tbsp poppy seeds for dressing.
  • Evenly pour over the top of the salad.
  • Toss salad to combine all ingredients and dressing.
