Not a typical Spring Mix Salad

Usually, I like to do a strawberry spinach salad for Easter, but this year what I served was not a typical spring mix salad!

Recently, I’ve been into mixing things up … in the kitchen… INTENTIONALLY… just want to clarify I’ve not been confused (although my kids may argue that point! LOLOL!!!). Anyway, I’ve just been into grabbing what’s leftover, around, and/or needs to be used up and seeing what I can come up with… it’s pretty fun, you should give it a try. 😊

Also recently, I’ve been into bagged salads… for three reasons. 1.) My brother brought one over…and it was REALLY good and SUPER SUPER QUICK AND EASY (who doesn’t like that!); 2.) SOMEONE in my fam who was opposed to bagged salads now accepts them (YAY); and 3.) I recently saw on the TV news (so it HAS TO BE TRUE!:}) that the quality standards and triple washing in the bagged salad production facilities are very sterile. [and BTW, DO NOT wash your bagged salad contents because your kitchen water and counter will contaminate it! (according to the aforementioned TV news story)].

SO, when it came time to create a salad for Easter, having a couple prewashed bags of green around that needed to be used up, this is what I mixed up:

Blueberry Broccoli Salad

Blueberries and broccoli together for a not so typical spring mix salad
Prep Time 10 minutes
Course Salad
Servings 8

Ingredients
  

  • A package of broccoli slaw
  • A package of iceberg mix
  • 3/4 C Blueberries
  • 1/2 – 3/4 C Pineapple chunks
  • 1/2 – 3/4 C Toasted walnuts
  • 4 – 6 oz. Crumbled Goat Cheese
  • Poppy seed dressing

Instructions
 

  • Spread shelled walnut halves on a cookie sheet and place in 350 degree oven for about 8 minutes. Remove, let cool for a minute or two and chop in half or thirds.
  • Mix broccoli slaw and lettuce mix thouroghly together in a salad bowl.
  • Rinse blueberries and add to the bowl.
  • Chop pineapple and add to the bowl. (You can use canned pineapple chunks and cut them in half or thirds or use fresh pineapple)
  • Add goat cheese and walnuts.
  • Combine 1/4 cup of sugar (regular or cane ), 3/4 C olive oil, 2 tbsp. apple cider vinegar, and 2 tbsp poppy seeds for dressing.
  • Evenly pour over the top of the salad.
  • Toss salad to combine all ingredients and dressing.

This salad was super easy to prepare, and it had an interesting taste combination. Plus, it was healthy and sweet AND creamy and crunchy! But most importantly… it tasted oh soooo good!  I hope you make it, taste it and like it!
