Kicking Off Superbowl Sunday With Eggs!

Less than a week away!

Looking forward to Superbowl Sunday… and not only is football top of mind that OTHER “F” word is, too! Yes, you know what I’m talking about!  Our FOOD “game plan” for the big day is underway!

What are we going to eat? Food representative of each team’s hometown, of course!

Whether rooting for Denver Broncos or Seattle Seahawks, fans of each have two great ways to kick off Superbowl Sunday with breakfast. Of course, the easy play for Bronco fans is the Denver Omelette. It’s been around since… well , forever, right? And with its basic no hassle ingredients, it’s an easy win!  As for those cheering for Seattle, how about some salmon toast bites?!? Don’t worry, they only sound dainty. They pack some punch!

We’ll just start with Denver without a coin toss since it comes first in the alphabet, joined the NFL first and actually produces coins at the Denver Mint.

So, for a Denver Omelette you’ll need:

2-3 eggs per serving

diced ham

medium chopped green pepper and white onion

shredded cheddar cheese

olive oil, salt and pepper

In a mixing bowl, slightly whip the eggs. Grease a frying pan with oil and heat on medium to medium high. I prefer a non-stick pan. Add the eggs. When they begin to set add the ingredients to one half and fold the other half over as soon as possible. Reduce the heat to medium for another minute or two and then to low, cover and remove the pan from the heat for a few minutes before serving. Since it’s the biggest football day of the year, why not cut the toast in the shape of a football for a bit of festive flair!?!

Moving on to Seattle, there are a couple different versions for the Seattle Salmon Toast Bites. It’s really just a matter of whether or not you use regular sliced bread or toasted pitas.

You’ll need:

eggs

salmon filet

bread slices or pita

olive oil, salt, pepper and dill (fresh and/or dried).

Basically its scrambled eggs with cooked salmon mixed in on top of toast triangles or pita triangles.

To cook the salmon, season with olive oil, salt, pepper and dill and broil until opaque and flaky.

Scramble the amount of eggs you’ll need and mix in the cooked salmon at the end or a few minutes before if it’s cold so the fish can warm.

Whether using sliced bread or pitas, cut them into triangles or football shapes. For the sliced bread, do this AFTER toasting. For the pitas, do it before toasting on a cookie sheet in a 325 degree oven for 3 – 5 minutes.

Once your toasts are topped with the salmon egg mixture, sprinkle with either dried or fresh dill.

If you are serving this on a platter, garnish with fresh dill sprigs. AND, since this is for the Superbowl and representing Seattle Seahawks, wear some colors by lining the platter with navy blue, green and/or grey liners or napkins…SCORE!
