Ready to BBQ a Vegetable?
Are you firing up your grill this weekend? If so, and you are looking for a healthy (and heavenly) vegetable to add to the grates, get some sweet potatoes!
SOOOO simple with sensational results!
All you have to do is peel and slice the potatoes into 1/4 inch circles from end to end. Season with olive oil, salt, pepper and garlic powder. If you have a grill basket like we do, that works best. We layered and secured the potatoes in a single layer in the square basket and grilled over medium to low heat, continuously flipping, for about 20 minutes. They were a little dry coming off the grill so we coated them with some additional olive oil… perfection!
And if you are wondering, like I was, if sweet potatoes are gluten-free, guess what? I Googled it and YES, they are! So… not only is this super easy, but its gluten-free! … if that matters to you! From what I can tell from my quick web search, the olive oil, salt and garlic powder are all safe for a gluten-free diet, too. I’m not sure about the pepper as I’m still learning about gluten-free, but if you follow this type of diet you’ll likely know, and please let ME know!
