Seattle Salmon Toast Bites

There are a couple different ways to make these. It’s really just a matter of whether or not you use regular sliced bread or toasted pitas.

You’ll need:

eggs

salmon filet

bread slices or pita

olive oil, salt, pepper and dill (fresh and/or dried).

Basically its scrambled eggs with cooked salmon mixed in on top of toast triangles or pita triangles.

To cook the salmon, season with olive oil, salt, pepper and dill and broil until opaque and flaky.

Scramble the amount of eggs you’ll need and mix in the cooked salmon at the end or a few minutes before if it’s cold so the fish can warm.

Whether using sliced bread or pitas, cut them into triangles. For the sliced bread, do this AFTER toasting. For the pitas, slice into triangles and then toast on a cookie sheet in a 325 degree oven for 3 – 5 minutes.

Once your toasted triangles are topped with the salmon egg mixture, sprinkle with either dried or fresh dill.

If you are serving this on a platter, garnish with fresh dill sprigs. AND, since this is for the Superbowl and representing Seattle Seahawks, wear some colors by lining the platter with navy blue, green and/or grey liners or napkins…
