We went to the meat market looking for a skirt, flank or sirloin steak for fajitas. Instead, we found teres major the filet alternative you MUST try!) at Vince and Joe’s … having had this one time before with delicious results, we shifted our plans, or as is more commonly said these days, we pivoted… and grabbed up a few pieces. Forget fajitas!
Teres Major is a cut of beef similar to beef tenderloin or filet mignon at a fraction of the price… AND with more flavor… it was 9.99/lb. I think when we had it a couple years back it was more like 5.99/lb. so like everything else these days the price has increased, but still way less than a filet and a superb alternative.
Really quite easy to make, too. While it is recommended to cook on the grill by indirect heat for the majority of the time, also searing and cooking in the oven is a good way to prepare it. This is the way I did it this time … last time resident grill master did it the other way.
I just seared it (I think I could have seared it a little more), salt and peppered it, topped it with chunks of garlic and butter and cooked it in the oven at 375 for about 20 minutes… or until internal temp was 130 and then took it out to rest for 5 minutes. Of course, cook less or more time depending on how you like your meat. Also, turned the broiler on at the end of cooking time for a few minutes to brown it a little. Again, an option.
Even the most scrutinizing of my eaters were pleased with the results.
Teres Major is not a regular at the meat counter so this is a case of when you see it grab it! I hope you do see it and I hope you grab it and give it a try.
