Avocado Toast for 1

I LOVE avocado toast…for breakfast or lunch… It’s filling (but not too much) and soooo delicious! Plus, it can be created a variety of ways depending on how you cook the eggs and what ingredients you add. Once you have a slice of your favorite bread (the one pictured is organic oat nut), an avocado and some eggs, you can pretty much add whatever else you want to make your own edible creation.

Here is a basic version of avocado toast, which doesn’t taste basic at all, and is really quick and easy to make!

Avocado Toast for 1

Prep Time 5 minutes
Servings 1

Ingredients
  

  • 1 slice of your favorite bread
  • 1/2 avocado
  • 1-2 eggs
  • 1/4 cup diced tomatoes (fresh is always best, but canned work really well)
  • 1/2 green onion
  • cheese (shredded or sliced)
  • fresh ground black pepper
  • fresh ground pink himalayan salt

Instructions
 

  • Toast bread slice.
  • Scramble 1-2 eggs.
  • Add diced tomatoes and sliced onions to egg while it's cooking.
  • Once egg is cooked and tomatoes and onion are warm, turn off heat and sprinkle cheese or lay slice of cheese on top. Cover with lid for a few minutes to allow the cheese to melt.
  • Spread avocado on toast.
  • Once cheese is melted, put the eggs on the avocado toast.
  • Grind pepper and salt on top.
  • Admire the beauty in front of you.
  • Eat it and enjoy every bite!
