Chickpeas — Spicy and BAKED!!!
Honestly, I haven’t paid much attention to the Gluten-Free craze, but I received Favorite Brand Name Recipes’ cookbook, Incredibly Easy Gluten-Free Recipes, and found “Spicy Roasted Chickpeas” that I had to try!
I love chickpeas in salads and use them to make hummus, but this recipe did something with them I never would have thought of… it BAKED them! I tried to find a link to the recipe online at www.fbnr.com but couldn’t so here’s what my family did and how we did it!

Rinse a can of chickpeas in a colander and drain.
Combine the chickpeas, 3 tbsp olive oil, 1/2 tsp black papper, 1 tbsp(or to taste) chili powder, 1/8 tsp (or more if you like it hotter) ground red pepper and spread in a single layer on a baking pan. Bake for about 15 minutes or until the chickpeas begin to brown. Shake the pan a couple times while baking. Sprinkle with the chili powder and red pepper and bake a few minutes more or until dark golden-red. Squeeze lime over the top and serve with additional lime wedges for garnish.
