Denver Omelette
2-3 eggs per serving
diced ham
medium chopped green pepper and white onion
shredded cheddar cheese
olive oil, salt and pepper, splash of water or milk
In a mixing bowl, slightly whip the eggs with either a bit of water or milk. Grease a frying pan with oil and heat on medium to medium high. I prefer a non-stick pan. Add the eggs. When they begin to set add the ingredients to one half and fold the other half over as soon as possible. Reduce the heat to medium for another minute or two and then to low, cover and remove the pan from the heat fro a few minutes before serving. Since it’s the biggest football day of the year, why not cut the toast in to the shape of a football for a bit of festive flair!?!
